- Two minced garlic cloves
- 1/3 cup olive oil
- 1-1/2 teaspoons kosher salt

- 1/2 pound orzo

- Lemon Juice of 2 lemons: Freshly squeezed lemon juice
- Olive Oil: Approx 1/3 cup
- Kosher salt: 1 teaspoon
- Freshly ground black pepper: 1/2 teaspoon
- Four scallions: minced of both white and green parts
- Pignolis: 1/4 cup, toasted
- Good feta: 3/4 pound diced in 1/2-inch pieces
- Fresh basil leaves: Approx 15 and cuts into chiffonade
To make perfect roasted vegetable orzo, first of all, you will have to preheat the oven to 425 degrees. Take a large baking sheet and apply olive oil on it. Now place the vegetables like eggplant, bell peppers, onion, and garlic on it and roast them for 40 minutes. Or bake them till their color becomes brown and turn them once baked from one side.
